Bushra Khan's Winter Harvest Salad
Here is a quick recipe, perfect for these winter months!
Ingredients for Marinade:
- Baby Arugula
- 2 Beets
- 1 Fennel
- 1 Orange
- 1/3 cup of Walnuts
- 1 tablespoon Mizithra Cheese
Ingredients for Dressing:
- 1/3 cup Tahini
- 2 tablespoons Olive Oil
- 1/3 cup Lemon Juice
- 1 tablespoon Maple Syrup
- 1/3 cup Greek Yogurt
- 1 teaspoon Chili Sesame Oil (optional for spice)
- 1/3 cup Water
Directions:
Preheat the oven to 425 degrees. Cut the beets and fennel into wedges and toss in marinade, throw on a baking sheet covered in foil for easier clean up. Put in the oven for 30 minutes. In a separate bowl, whisk all ingredients for salad dressing until it has a creamy like texture. Set aside and start plating. Top with a little bit of dressing and serve with extra on the side.
