Bushra Khan's Winter Harvest Salad

Here is a quick recipe, perfect for these winter months!

Ingredients for Marinade:

  • Baby Arugula
  • 2 Beets
  • 1 Fennel
  • 1 Orange
  • 1/3 cup of Walnuts
  • 1 tablespoon Mizithra Cheese

Ingredients for Dressing:

  • 1/3 cup Tahini
  • 2 tablespoons Olive Oil
  • 1/3 cup Lemon Juice
  • 1 tablespoon Maple Syrup
  • 1/3 cup Greek Yogurt
  • 1 teaspoon Chili Sesame Oil (optional for spice)
  • 1/3 cup Water

Directions:

Preheat the oven to 425 degrees. Cut the beets and fennel into wedges and toss in marinade, throw on a baking sheet covered in foil for easier clean up. Put in the oven for 30 minutes. In a separate bowl, whisk all ingredients for salad dressing until it has a creamy like texture. Set aside and start plating. Top with a little bit of dressing and serve with extra on the side. ENJOY!
