Bushra Khan's Butternut Squash & Cauliflower Vegan Tacos!
A lot of you have been asking for more vegan recipes/ingredients/resources lately! Here's a fun recipe! If you are not vegan, you can substitute or add your favorite protein.
- 2 cups cauliflower florets
- 2 cups butternut squash, cubed
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon garlic
- Taco Seasoning (1 teaspoon of each: paprika, cumin, coriander, ancho chili powder, seasoned salt, turmeric, white pepper)
- Salsa (1 cup diced mango, 1 cup diced cherry tomatoes, 1/2 cup onion, 1/2 cup red bell pepper, half of a jalapeno with no seeds, 1 cup cilantro, 1 tablespoon olive oil, 1 tablespoon lemon juice)
Mix vegetables with lemon, olive oil, and spices. In an oven friendly dish throw vegetables with 1 tablespoon of garlic. Put in the oven at 400 degrees for 20 minutes. Make the salsa and warm your tortillas. Put together and enjoy!
